Finally, FINALLY the weather is starting to cool down enough that I can turn my oven on without melting into a sweaty puddle. This is a good thing.
I thought in light of the cooler temps I would share some of my favorite fast meals for fall. Instead of salads and other meals that don’t require heat, I’m starting to crave warm things like soup and casseroles.
And roasted vegetables. All the roasted vegetables.
Here are just a few that I use over and over again and make dinner a tasty and easy affair!
Creamy Broccoli and Spinach Soup
I make a big batch of this on Sunday and then have soup for dinner and or lunch the rest of the week. I have yet to get bored of this delicious soup!
Three years later and this is still one of my favorite soups to make. Not only is it delicious, all you have to do is throw stuff in a slow cooker in the morning and you have dinner when you get home.

Vegetables that are roasted are my jam.
You can easily trade the black beans for ground beef or turkey and swap the brown rice for cauliflower rice and you have a simple paleo dinner!
