Adam and I are currently on our way back home from a wedding in Michigan. It was a beautiful wedding and interesting to see two cultures (Indian and American) come together. I’ve never been to an Indian wedding so I really liked seeing their traditions and how they celebrate. Plus, the weather was great and the farm scenery was awesome.
Congratulations to Katie and Sachin!
Now, even though I’m in a car for about six hours, many of you are probably headed to a Labor Day BBQ. Lucky ducks. If you still don’t know what to make, I’ve got you covered. These are my favorite quick recipes that make a hungry crowd happy.
Last Minute Labor Day Recipes
Muhammara– If you need a dip that isn’t hummus…
Zucchini Avocado Hummus– …. and if you need a dip that is like hummus but secretly isn’t.
Spiralized Greek Salad– Super fast and tasty
Purple Cauliflower Tabbouleh– Ok, this is just a pretty salad that also happens to taste awesome.
Sweet Potato Dumpling Salad– I love the simplicity of these dumplings but the dressing is killer too.
Olive & Tomato Salad– Tired of me mentioning this salad? Too bad, I won’t ever stop making it.
Spinach Artichoke Stuffed Mushrooms– Great appetizer!
Deep Dish Pizza Muffins– These actually make the perfect finger food. And you can pretend to eat an entire pizza in one bite.
Chicken Salad– A classic for any BBQ party.
Buffalo Cauliflower Taquitos– Definitely make the fancy ranch dipping sauce.
Penne Pesto Pasta with Roasted Cherry Tomatoes– I still love the alliteration in this recipe… and the pesto.
Pesto Eggplant Burgers– Do your vegetarian friends a favor and throw a couple of these on the grill too.
Individual Cherry Basil Cobbler– Ever wanted to eat a whole pie? Here’s your chance.
Banana Pudding– A healthier twist on banana pudding and it comes together fast.
Banana Chocolate Chip Mini Muffins– Who doesn’t love mini muffins? No one. That’s who.
Kettle Corn– You might think kettle corn is too complicated but you would be wrong. Make this.
Zoodle Cookie Bars– Weird way to use zoodles that totally pays off.
Mexican Hot Chocolate Fudgesicles– Make these in the morning so they’re ready by dessert time!
Happy Labor Day Friends!!
