Slow Cooker Minestrone Soup

Another slow cooker recipe for you today! I have been on a soup kick lately, probably because of the colder weather.  I have been craving warm and hearty and delicious soup. Plus the house smells amazing all day as the soup simmers in the slow cooker!  Slow Cooker Minestrone Soup | Life Healthfully Lived

Here is my version of minestrone soup.  You can play with the vegetables/beans and use whatever you have handy.  Either way, this soup will warm and fill you up on the coldest of days! Enjoy!

  • 1 onion, diced
  • 4 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 1/2 cup chickpeas (if using dried beans, soak overnight)
  • 1/2 cup cannellini beans
  • 1/3 cup millet or quinoa
  • 1 tbsp tomato paste
  • 2 14 oz cans diced tomatoes
  • 3 cups vegetable broth
  • 3 cups water
  • 2 tsp oregano
  • 2 tsp basil
  • 1 tsp parsley
  • salt and pepper

1.  Cut up all your vegetables.  Saute them over medium heat for about 7 minutes or until the onions are soft. Add into slow cooker.  You can skip this step and just throw everything in your crockpot if you wanted, but sauteing the vegetables really adds flavor to your soup.  Trust me, it makes a difference!

2. Add in the rest of your ingredients and mix everything together.  Cover and cook on low for 7 to 8 hours.  Before serving taste to see if it needs any more salt or pepper.  Serve with some warm bread and enjoy! Slow Cooker Minestrone Soup | Life Healthfully Lived
