There were a lot of big things that happened this weekend and most of them were pretty amazing! The only not amazing thing? The heat. Woooooo is it hot and steamy out there. But it’s summer and that is kind of par for the course so I won’t complain too much.

Low-Carb Avocado Pudding
Ok, we all know that avocado pudding isn’t a new thing. In fact, it’s probably an old thing at this point. It’s touted as the healthier alternative to regular pudding because it’s full of good for you fats thanks to the avocado. I’ve even used avocado pudding in two of my recipes (Chocolate Cheesecake Parfait and Banana Pudding if you were wondering).

Smoky Paprika Chicken
Cooking up chicken breast during my meal prep has become a weekly thing ever since I created that Simple Mustard Chicken a few weeks ago. It’s just so easy and then I can cut up some for my lunches and eat the rest for dinners throughout the week.
Killing multiple birds with one stone is kind of my jam. When it comes to food, not killing actual birds because that’s a little mean. And who goes out and kills a bird with a stone nowadays?
