Whew. Not only was this a long labor day weekend it was a long weekend full of labor. Adam and I are getting closer to moving in with my parents (if you don’t know the full story, check out this post) and that means we are ramping up the work.
After (FINALLY) removing all the wallpaper, we spent this past weekend washing, repairing, priming, and painting about 90% of the space we’re taking over. It was a lot of work and I wasn’t always the happiest of campers while we did it, but it is nice to see some progress. I don’t know if you’ve ever removed wallpaper, but for the majority of the time, it feels like it will never end. Even when you get all the wallpaper down, the walls still look terrible and there are like 50 more steps to finishing.
We are now at the point where there are only like 20 more steps 🙂
Anyways, Saturday and Sunday were spent working until about 8 pm so we could get a lot done. We decided we would take Monday off and enjoy the holiday as much as we could. The whole family got together and we grilled various meats, ate delicious food, and enjoyed each other’s company. It was a much-needed break.
Speaking of food, I thought that I would do a little What I Ate Wednesday for you since I haven’t done that in quite some time. My meals have drastically changed over the past few months. I’m working on a few posts sharing the reason why that’s happened, but for right now, I thought it would be good to show you how your eating habits can change and evolve and grow over the years. I used to have such a rigid view of what was healthy and what was not. It was very black and white for me but the past few years have shown me that health is much more grey than I wanted to believe. I can’t say I’ve willingly accepted that fact, but I’m working on it.
So here is what a day looks like for me right now:
Breakfast- Homemade egg sandwich with Ezekiel sprouted wheat English muffin, egg, sausage patty, and Havarti cheese.
Mid-Morning Snack- Dark Chocolate Chip Peanut Butter Perfect Bar

This pretty much tastes like raw cookie dough and I ain’t mad about it.
Lunch- Wrap with La Tortilla Sprouted Wheat tortilla, lettuce, salami, Havarti with dill, mashed avocado, and Everything But the Bagel Seasoning. Side of baby carrots, some PB filled pretzels, and Greek yogurt with cinnamon granola
Afternoon Snack- Chocolate banana PB smoothie (really simple but really good and I might put it on the blog soon. It almost tastes like a Frosty from Wendy’s!)
Dinner- Roasted chicken thighs with BBQ sauce and cottage cheese, roasted broccoli, cauliflower tots (seeing a theme?)

After Dinner Snack- Mug of Chex Cinnamon cereal and handful of chocolate sea salt toffee pretzels (I want to be buried in these, FYI)
If this feels like a lot of food compared to what I used to eat, you’re right. But this is what my body needs right now and instead of fighting it like I would have in the past, I’m trying really hard to listen to it. Do I always succeed? No. But I do keep trying and I think that’s all that matters.
