I don’t know if I’ve ever done a “What I Ate Wednesday”, but I’m jumpin’ on the bandwagon today. I’m weird and think it’s fun to see what other people are eating so maybe some of you are weirdos and want to see what I eat.
We can be weirdos together!
Just a side note, I’m in Sycamore this week so while my meals are fairly normal, I don’t have all the things I normally eat when I’m at home. I’m also testing out a lot of recipes because I can take pictures with natural light while I’m here so I’m eating a lot of what I make.
Breakfast #1
I’m not sure if this counts as a meal but I’ve started adding a version of Healthful Pursuit’s Rocket Fuel Latte in the morning after I work out.
My version has about 12 oz of yerba mate blended with 1 tbsp collagen, 1 tbsp coconut oil, 1 tbsp of cocoa butter (AMAZING), and 1/2 tsp of cinnamon. I tend to do a lot of my writing/errands right in the morning because that’s when I’m most productive so this latte holds me over until I eat “real” breakfast.
Breakfast #2
95% of the time I have a poached egg but today I was feeling a fried egg so that’s what I made. I’ve also gotten in the habit of making a breakfast salad. Some say odd I say delicious. This one has mixed greens, cilantro, dill, parsley, sauteed zucchini, and avocado.
Lunch
I’m working on another N’Oatmeal recipe but this time with cauliflower as the base instead of spaghetti squash. It’s pretty tasty but it still needs a little more tweaking. Anyways, I had that for lunch topped with toasted pumpkin seeds, cacao nibs, crushed almonds, and Trader Joe’s mixed nut butter. Not pictured is the banana I had along with this.
Dinner
I’ve also gotten in the habit of making a huge salad as a starter for dinner. It tastes great, uses up leftover odds and ends, and gets more vegetables in my system. This one has roasted carrots, roasted garlic, and a chive/dill dressing.
After this, I had some roasted cauliflower and a version of my zoodle carbonara. I don’t have a spiralizer out here in Sycamore BUT I found these already spiralized zoodles at Jewel. How cool is that?! Yes, they’re more expensive than doing it yourself but if you’re short on time or don’t have a spiralizer this is a great option.
So, that’s my day in food. I generally eat the same type of things most days but I’m working on adding more variety to my meals.
Oh! I also had this homemade chocolate for dessert because there is always room for chocolate 🙂
