Happy Monday! I’m all sorts of in a good mood thanks to the beautiful weather we’ve been enjoying lately. Spring has sprung round these parts and it’s here in full force. Trees are budding, grass is green, flowers are blooming, and bugs are back.
Hey, not everything about spring can be sunshine and rainbows.

It is nice to not spend five hours layering up just so I can walk to the bus stop and not freeze to death. It’s also nice to actually WANT to spend time outside instead of enduring the great outdoors to scurry into the warmth.
When I wasn’t spending time enjoying the sunshine, I was getting food ready for the upcoming week. I’ve noticed that on the weekends I like to make dinners that will serve as leftovers for lunches during the week and I like to prep make ahead meals for dinners during the week. This makes everything SO much easier during a busy week and it’s one less thing I have to worry about.
So I thought I would share some of my favorite make-ahead meals and the recipes that are keeping both Adam and I fed and happy during the week. Then it’s time to get back outside and enjoy that Vitamin D!
