Coconut Garam Masala Cauliflower Rice
Cauliflower power strikes again. If you weren’t aware, I love cauliflower. Not only is it delicious simply roasted it is one of THE most versatile vegetables.
Don’t believe me?
Just a few ways you can use cauliflower:
- Mashed into a creamy smooth puree
- As a pizza crust
- As rice
- As taco/burrito/taquito filling
- Creamy sauce
- Bread
- Tater tots
- “Steaks” (not actual steak just cooked like one)
- Brownies (yes)
I mean, cauliflower is pretty much on the same level of magical as unicorn tears.

Labels
This weekend was spent dog-sitting for both my parents and sister and husband. Busy weekend but full of dogs, so I really can’t complain. Plus the weather was absolutely FABULOUS. Hopefully, you got the chance to get out and enjoy it!
Before I get into my meal prep stuff (which is a little sparse on account of me being away all weekend), I just wanted to talk about labels. Don’t worry, this isn’t going to be preachy or ranty, just a general observation and reminder for myself.

Pumpkin Pie Bites
After messing these up the first three times, I almost gave up. But I’m not a quitter so I gave it one more shot and came up with these little treats. And shockingly, they really do taste like little bites of pumpkin pie.
Or at least I think so. Just tell me they do so I don’t feel bad about throwing away like 50 inedible bites.

Rain, Rain… You Can Stay
For some reason, I am totally fine with rain during the Fall. I relish it, in fact. A rainy day in the Fall is the perfect excuse to stay inside, read, drink hot tea, bake all the things, and pretty much just act like a hermit.
The only time I don’t like rain in the fall is when it cancels roomie reunion plans.
