Coconut Garam Masala Cauliflower Rice
Cauliflower power strikes again. If you weren’t aware, I love cauliflower. Not only is it delicious simply roasted it is one of THE most versatile vegetables.
Don’t believe me?
Just a few ways you can use cauliflower:
- Mashed into a creamy smooth puree
- As a pizza crust
- As rice
- As taco/burrito/taquito filling
- Creamy sauce
- Bread
- Tater tots
- “Steaks” (not actual steak just cooked like one)
- Brownies (yes)
I mean, cauliflower is pretty much on the same level of magical as unicorn tears.

Moving + Meal Prep
No. Adam and I didn’t move. That would be insanity because we have only lived in our new place for five months. I mean, I’m not saying we wouldn’t be crazy and try something like that, but we didn’t.
My sister and brother-in-law decided to move.

I’m going to need Summer to back off because it is officially Fall. I don’t think I can do too many more 90+ days with a humidity of 1000%. Yes, 1000%. Trust me, I’m married to a meteorologist.

Green Enchiladas
I tried. I tried like three different times. We have had more enchiladas than a human should have to eat. That’s a lie. Enchiladas are delicious and there should be an endless supply. But we have eaten a lot of enchiladas over here.
Yet I just can’t get a good picture of enchiladas made in the slow cooker. No matter what, it sort of looks like vomit.
