Even though I publicly professed my approval of chicken boobs a while back, I will never let go of my love of chicken thighs. They are delicious, pretty cheap, and no matter how you cook them, they stay nice and juicy.
My usual plan of attack when it comes to chicken thighs? Make them in the Instant Pot and just change up the flavors I add to keep things simple but interesting/tasty. Which if you follow me on Instagram, you’ve seen the endless parade of shredded chicken bowls.

Happy Monday! I’m all sorts of in a good mood thanks to the beautiful weather we’ve been enjoying lately. Spring has sprung round these parts and it’s here in full force. Trees are budding, grass is green, flowers are blooming, and bugs are back.

I am AWFUL at updating my recipe page. Which is a shame because that makes it really hard to find all the tasty things that I post on the blog. But every now and then I finally get my act together and update the page.
Often that involves going back months and months to find everything I made so I don’t forget anything. It’s time-consuming, which it wouldn’t be if I just updated it regularly like an adult.
But what fun would that be?
