How To Dress A Salad

No, I’m not talking about putting little shirts and pants on your lettuce leaves.  I’m not that weird.  Ok, yes I am but that is beside the point.  Salads are a great way to get in a ton of vegetables and there are endless varieties of salads.  Even with so many different combinations, people still find salads boring.  Their solution to fix boring salads is to top them off with dressings.  Don’t get me wrong, I love dressing and probably have consumed a mind boggling amount of ranch dressing.  Store bought dressings though are LOADED with chemicals and preservatives and a ton of other not good for you ingredients.  Go ahead and get that bottle of dressing out of the fridge and read the ingredient list.  I’m going to bet there are some things in there that you can’t pronounce.  That’s no good.  Fear not! You do not have to give your dressings, you just need to go about them in a different way.  Homemade dressing is super simple to make and so much better for you than store bought.  In fact, you probably have all the ingredients on hand to make your own simple dressing.  I’m going to show you how to make a simple dressing and give you a few variations so that you can make your own delicious salad dressing!

The basic components of a salad dressing are simple.  Oil and some kind of vinegar.  Your ratio of oil to vinegar can be made to your preference, but I tend to like a little bit more vinegar than oil in my dressing.  Now there are a variety of different oils that you can use to make your dressing beyond the obvious olive oil.  I also like avocado oil, flaxseed oil, and I have even tried walnut oil which was pretty tasty.  You want to stick with lighter tasting oils since you won’t be cooking the oil.  Oils like peanut, coconut, or palm oil will have a little bit stronger taste and could overpower the other flavors of the dressing.  Once you pick the type of oil you want to use you can pick a vinegar to go with it.  The three that I use the most are apple cider vinegar, balsamic vinegar, and white wine vinegar.  I’ve also made some dressings with rice vinegar.  There are many types of vinegars out there, so pick ones that you like the most.  Once you’ve chosen an oil and a vinegar, it’s time to add some seasonings.  The sky is the limit here so use your favorites or whatever you have on hand.

Ok, that is the bare bones of a homemade salad dressing.  Tasty for sure, but a little boring.  Good thing it is easy to come up with a variety of different dressings to top your salad.  The easiest way to make most of these dressings is to place all the ingredients in a jar and shake them up.  That way they are easy to store and you can add to them whenever you need to.  Some of the dressings I’m going to share need a blender or food processor, but I’ll make a note if they do.  Here are a few dressings that I have made myself:

  • 1/4 cup olive oil – 1/2 cup apple cider vinegar – 1 tsp oregano – 1 tsp basil – pepper to taste
  • 1/4 cup avocado oil – 1/3 cup rice vinegar – 2 tbsp lime juice – 1 tsp cilantro – 1/2 tsp garlic powder
  • 1/4 cup flaxseed oil – 1/3 cup white wine vinegar – 2 tsp italian seasonings – pepper to taste

These are quick and easy to make and will keep in your fridge for a few weeks.  Now, perhaps you are more a fan of creamy dressings (ranch lovers unite!) and these oil and vinegar combos are not doing it for you.  Not to worry, there are plenty of options when it comes to homemade creamy dressings.  These dressings will need to be made in a blender or food processor to get the right consistency.

  • 1/2 avocado, diced – 1/4 cup tahini – 3-4 tbsp lime juice – 1 tsp cilantro – 1 tsp chili powder – salt and pepper to taste
  • 1/2 cup smooth almond butter – 1/4 cup soy sauce or liquid aminos – 2 cloves garlic, minced – 1 tsp chinese five spice
  • 1/2 cup cashew cream – 1/4 cup smooth peanut butter – 2 cloves garlic – 1-2 tsp smoked paprika – salt and pepper to taste

You can also do a very simple herb and oil dressing.  Using 1/4 to 1/2 cup oil of your choice, blend in a few handfuls of your favorite herbs, and a few tbsp of mustard (I like spicy brown) until you have a pourable consistency.

There are so many options when it comes to homemade salad dressings.  Get creative and try making some of your own concoctions.  Use pureed beans to get a creamy, hummus like dressing or go super simple with just a little oil and vinegar.  Find flavors that you enjoy and will have you devouring salads by the plateful!  Remember, healthy doesn’t have to be hard or complicated.  More often than not, it’s better to just keep it simple!

Plantain Porridge Breakfast Bowl

I love breakfast.  It’s one of my favorite meals of the day and sometimes, I eat it for more than one meal of the day.  Sorry, I’m not sorry.  I usually have a rotation of a few different breakfast dishes that I go through depending on my mood for the day.  One of my favorites is oatmeal.  It’s just so hearty, plus you can put literally ANYTHING into oatmeal (meaning I put spoonfuls of peanut butter in mine) and make it taste amazing.  As much as I love oatmeal, sometimes in the summer you don’t want a bowl of oatmeal.  You want something a little lighter and a little cooler.  Enter plantain porridge.  The idea of eating porridge made from fruit might seem a little strange, but trust me it tastes really good.  The best thing about this breakfast is that just like oatmeal, you can mix in an assortment of toppings.  And let’s be honest, I’m all about the toppings.  Give this quick and easy breakfast a whirl and tell me how you customize your bowl!

  • 1 large plantain or 2 small plantains, yellow or black skinned (NOT green!)
  • Toppings of your choice (I like peanut butter, flax and chia seeds, raisins, goji berries, toasted buckwheat groats, and cinnamon)

 

 

 

 

 

 

1. Peel the plantain by slicing of one end and then cutting a slit down the center.  Slice the plantain into smaller chunks.

2. If your plantain is soft enough you can mash the slices right in the bowl until it is a creamy almost yogurt-like texture.  If it is a little firmer, place in a blender or food processor and pulse a few times until smooth.

3. Place in your bowl and top with whatever you feel like.  Try almond butter or tahini. Try any type of berries like raspberry or strawberry.  You could add sunflower seeds, pumpkin seeds, walnuts, cashews, or even pistachios.  Get creative and try some new combos.

Once you pop…

No, this isn’t a post about Pringles.  Sorry!  But it is about popcorn, which happens to be one of my favorite snack foods.  I’m not a huge snacker anymore, but Friday and Saturday nights beg to have a big bowl of popcorn in your lap while you watch a movie.  I don’t have a recipe for you this Friday per say, but I do have a few ways that you can enjoy popcorn as a healthy (yes, healthy) and delicious snack.

First, let me be clear and say when I talk about popcorn I am NOT talking about movie theater popcorn covered in “butter” and salt nor am I talking about microwave popcorn that is also covered in “butter”.  I am talking about buying the actual kernels of corn and popping them yourself.  Before you stop reading and move on to other things because making popcorn yourself takes way too much time and energy, let me assure you it really doesn’t.  Making your own popcorn is a fairly simple and easy process.  The easiest way to make healthy and totally customizable popcorn is to pop it using an air popper and then add your own toppings.  This is how I make my popcorn and it is as easy as measuring out your popcorn, pouring it into the machine, and turning it on.  That’s it.  No extra oils or additives just delicious popcorn.  Most air poppers are fairly inexpensive and will last you a long time too.

Another way to make popcorn is on the stovetop.  In a large pot, heat a little oil (coconut oil is really good for this) and add in your kernels.  Shake the kernels occasionally and as the oil heats up your kernels will start to pop.  I’ve done this a few times and I recommend you make sure you keep an eye on the popcorn because once the kernels start to pop, it can get a little crazy.  If you’re not watching you might have a kitchen full of popcorn, which might not be a bad thing…..

For those of you who like to just put a bag of popcorn in the microwave and hit go, you can still do that too.  Place your popcorn into a paper bag and roll it closed.  Use the popcorn setting on your microwave and you’re good to go.  No added chemicals or preservatives, just popcorn!

Now that you know how easy it is to make popcorn on your own, how about some topping ideas? You can add pretty much anything your little heart desires and that is what makes popcorn such a great snack.  You can customize it to whatever craving you have at that time! For toppings try:

  • Salt and pepper. A classic flavor and really yummy
  • Garlic powder and Italian seasonings. A very savory treat
  • Nutritional yeast.  A healthy way to add a cheesy flavor and one of my favorite toppings
  • Cinnamon and nutmeg.  A nice and light sweet flavor
  • Pumpkin Pie spice.  Who doesn’t like all things pumpkin?
  • Dark chocolate or cocoa nibs.  Chocolate is a great popcorn topping.  Melt it first and drizzle it or add chips while your popcorn is hot and make melty clusters.
  • Cajun seasoning.  Like spicy? Then try some cajun or creole seasonings
  • Honey and peanuts. Ok, this might sound weird but this combo tastes an awful lot like cracker jacks.  Add in some warm honey and peanuts to your popcorn and stir to combine everything

There are seriously endless ideas when it comes to popcorn toppings.  Popcorn is a great snack that is light, fills you up, and satisfies the need to munch on something while relaxing at home.  So give homemade popcorn a try and see why I absolutely LOVE a nice big bowl of popcorn on the weekends!
