IDIY Wednesday: Mushroom Gravy | Life Healthfully Lived have another holiday edition of DIY Wednesday for you today: gravy.  After the ganache last week, I thought we would go savory today.  I know it’s a little late for Thanksgiving, but there are still plenty of meals this season that will warrant gravy.  I wanted to show you how easy it is to make your own gravy because I was just as surprised when I learned.

When I was younger, gravy was bought in a jar.  My mom pretty much made the rest of our Thanksgiving feast from scratch, but the gravy and the jellied cranberries came from a jar and a can.  So in my tiny kid mind, that is how all gravy was made.  In a jar and then heated up on the stove.DIY Wednesday: Mushroom Gravy | Life Healthfully Lived

As I got older and started cooking for myself and reading cookbooks, I saw recipes for gravy.  What?! You can make this from scratch?!  Yes.  Yes, you can.  And it is really easy.

I’m making a mushroom gravy for those of us who don’t eat meat, but you can make gravy from pretty much any cooked meat you have following this recipe.  Whichever you choose, it’s really simple and so much healthier to make your own gravy.  It’s also cheaper which is a must during the holiday season!

Mushroom GravyDIY Wednesday: Mushroom Gravy | Life Healthfully Lived

  • 8 oz mushrooms (I used baby bellas), sliced
  • 2 large cloves of garlic, minced
  • Olive oil
  • 1/3 cup onion, minced finely
  • 1 to 2 tbsp coconut aminos, liquid aminos, or soy sauce
  • 1/2 cup vegetable broth
  • 2 tbsp white wine vinegar
  • 1 tbsp potato starch or tapioca starch (I used potato)
  • 1 1/2 cup cool water
  • 1 tsp parsley
  • 3 tsp fresh rosemary leaves
  • salt and pepper.

 

  1. Heat a little olive oil in a medium skillet over medium-high heat.  Add the onions and mushrooms and saute for about 5 minutes until the onions are soft. Sprinkle in a little salt and pepper then add the garlic and saute for another minute.
  2. Add the coconut aminos or soy sauce, white wine vinegar, and the vegetable broth.  Cook until the liquid has reduced by about half and the mushrooms have gotten smaller.
  3. While the mushrooms are cooking make the starch slurry.  Combine the 1 and 1/2 cups water and 1 tablespoon of starch and mix together with a fork.  Make sure the mixture is smooth and all lumps are gone.
  4. Pour the slurry into the skillet and stir to mix everything together.  The slurry will start to thicken as it cooks.  Add the parsley and rosemary.  Taste and add salt and pepper to your taste.
  5. Once the gravy is thick enough, pour into a gravy boat or bowl and use immediately.

Gravy needs to be used right after it’s made, because unlike its store bought counterpart it doesn’t last forever.  It’s much better fresh and since it’s so easy to make you can whip it up right at the end of your cooking.DIY Wednesday: Mushroom Gravy | Life Healthfully Lived

Simple Gifts For The Healthy Cook | Life Healthfully LivedIt’s the most wonderful time of the year!!  I am approaching Buddy the Elf levels of holiday cheer over here in Chicago and it’s awesome.  I spent all yesterday putting up our Christmas decorations while of course watching Christmas movies and listening to Christmas music.  Can I fit one more Christmas in this paragraph?  Yup!

I was thinking about writing a post on how to stay healthy during the holiday season, but I feel like that gets written over and over every year.  Yes, it’s hard to stay on track during this time of year when there are a thousand opportunities to eat cookies and stuff yourself with a large dinner, but it isn’t entirely impossible.  And you know what?  It’s ok if you go a little overboard every now and then.  I like Kathy’s approach to healthy eating over at Kath Eats Real Food.  Healthy is a squiggly line.  Sometimes it will be up and sometimes it will be down, but overall it’s about a healthy balance.

So in lieu of the tips and tricks to eat well during your Christmas and New Year’s celebrations, I am going to tell you to buy presents.  Not for me (although if you’re feeling it, I am in desperate need of this Vitamix.  Yes, desperate need), but for the cook/cooks in your life.  You don’t need a ton of fancy utensils to eat well, but there are a few basics that I use over and over again that can really make a difference in the kitchen.  So here is a gift list for some simple tools that can make healthy eating easy and even a little fun!

I use a spatula pretty much every day.  From scraping things out of the food processor or a bowl to making scrambled eggs, a spatula is a must in my kitchen.  Plus you can find some cute ones over at Target for less than $5.  These would make a great stocking stuffer!

I’ve raved about these over and over again, but that’s because they are awesome.  A Silpat is pretty much reusable parchment paper.  Nothing sticks to these things so you can roast vegetables, bake cookies, roll out bread dough, and even make chocolate bark without working about half the food sticking to the pan.  I have two that get used regularly and they have lasted me a long time.

Not a flashy or exciting gift perhaps, but a very useful one.  You can use these for more than grinding fresh pepper, which you should be doing.  No one needs to use pre-ground pepper when it’s so easy to do fresh.  Just ask Alton.  You can use it to grind coarse sea salt into a finer powder, seeds like cumin, fennel, or grains of paradise, and you can use it to make your own spice blends.  This is a super versatile gift and one that is sure to be used over and over.

If you are a leftover junkie like me (and you should be after I gave you all of these wonderful ideas!) then these will be a must.  No more plastic containers that always lose their lid, get stained or smell, and that will inevitably melt at some point.  These dishes are great for leftovers, can go in the freezer, and are perfect portions to stick into your lunchbox for a healthy lunch at work or school.

Ok, so this might be the one splurge item on this list, but it is worth it.  Actually, you don’t have to spend a ton on a food processor because I made do with a secondhand Black & Decker for many years before Adam decided to upgrade mine for our anniversary.  Food processors are great for nut butters, chopping a ton of vegetables, making dough, and pretty much anything else you can think of.  Even though this is pricier than the other things on the list, you will use it enough to justify the cost.

DIY Wednesday: Dairy-Free Chocolate Ganache

AfterDIY Wednesday: Dairy-Free Chocolate Ganache a week off, DIY Wednesday is back!  I know you missed it and were totally lost without a fun DIY to fill your Wednesday.  At least that’s what I would like to think.

I’m SUPER excited about this DIY because I didn’t think it was going to work and it did and it is amazing.  If you don’t know what a ganache is, then you obviously don’t spend enough time in bakeries or watching the Food Network.  A ganache is a glaze, sauce, icing, or filling that is typically made with cream and chocolate.  It can be used for cakes, cupcakes, truffles, or donuts.  Basically, anything that is delicious can be made even more delicious with ganache.DIY Wednesday: Dairy-Free Chocolate Ganache | Life Healthfully Lived

Ganache used to be one of my favorite things.  It isn’t super heavy or super sweet like typical frostings and it really lets the chocolate flavor shine through.  And let’s face it, chocolate is the reason many of us get up in the morning.  Wait, is that just me?  Oh well, it’s true and I ain’t ashamed of that.

So you can imagine how excited I was when I was able to make it without dairy but still just as delicious.  I figured I would share this one with you right as the holiday season is upon us because this will definitely come in handy for all your baking needs.  You can use it as a frosting or icing for you cooking, as a decadent hot chocolate drink, as a filling for pastries or sweet breads, or stick it in the fridge for a rich and creamy mousse and a simple dessert.  The possibilities are endless and with just a few ingredients you can have this on hand at all times.  That is a very good thing!

Dairy-Free Chocolate GanacheDIY Wednesday: Dairy-Free Chocolate Ganache | Life Healthfully Lived

  • 1 cup full-fat coconut milk, unsweetened
  • 2 oz unsweetened baking chocolate (I used Baker’s brand)
  • 2-3 tbsp maple syrup, honey, molasses, whatever liquid sweetener you have on handDIY Wednesday: Dairy-Free Chocolate Ganache | Life Healthfully Lived

 

  1. Using a microplane or fine grater, grate the 2 oz of chocolate into a medium bowl until you have a little pile of chocolate shreds.  Set bowl aside.
  2. Get a small to medium saucepan and pour the coconut milk in.  Heat the milk over medium heat and whisk frequently.  You don’t want the milk to boil or scald.  Whisk in the maple syrup or other sweetener and whisking until you get a light simmer.  This should take about 10 minutes
  3. Remove the milk from the heat and get your bowl with chocolate shreds.  Slowly pour in the sweetened warm milk, whisking the whole time.  Keep whisking until the chocolate is completely melted and everything is smooth.
  4. You can use the ganache right away or you can store it in an airtight container in the fridge for up to a week.DIY Wednesday: Dairy-Free Chocolate Ganache | Life Healthfully Lived

Almost… I’m actually coming to you from Sycamore this week.  I’m house/dog sitting and get to do a bit of “country” livin’ in my old neighborhood.  I actually do miss Sycamore sometimes.  It’s slower pace out here, quieter, calmer, and really quite beautiful.  While I love my Chicago neighborhood, it’s nice to come back and slow things down.

It’s also nice because I get to work in a huge kitchen and take food pictures with all the natural light.  This house is a bloggers dream.  Or at least this galley kitchen, two-window, interior apartment-dwelling blogger’s dream.  So be on the lookout for some good food pics in the coming weeks…

I’m working on a few new recipes and I was thinking of a few ideas.  I honestly put recipes on the blog that I cook for me and Adam.  I don’t usually go out and create something that he or I wouldn’t eat or make regularly.  While that sometimes limits what I put on here, I think it also shows how a real home cook prepares meals.  I’m not a trained chef or even a professional recipe developer.  I just put things together that sound good in my head and I think would taste good.

With that in mind, I was thinking of reworking one of my favorite childhood meals.  My mom’s leftover casserole.  She would make this a few days after Thanksgiving and it was almost better than the Thanksgiving feast itself.  I just have to figure out if I can gear it towards the healthier side of things…

I know I’ve said this before, but I am going to work on putting more meals that have meat in them up here.  I don’t personally eat meat, but Adam does and I do prepare a few dishes for him that he really likes and would make good weeknight meals.  I want this to be a place that anyone can come to and find at least one recipe that will fit their lifestyle, tastes delicious, and is healthy.

Rock What You Got

I’m going to have you do a little homework before you read this post.  Oh stop moaning, it’s not that hard.

Did you listen?  Good.  I’m trusting that you did.

I have listened to Superchick for years and in fact, I have heard this song a good 50 times before.  But as I was out running about the other day, this song came on and it kind of hit me in a new light.

Rock what you got.

I have spent a lot of time trying to change things about me so that I can “rock it”.  I focus on what needs to be fixed or adjusted to get to a point where I feel like I am worthy of being awesome.

That’s not cool.

I have been given everything that I need to rock.  There are so many awesome things about me that no one else has, and I’m doing myself a disservice if I don’t choose to rock what I’ve got.

I’m not saying that I don’t want to improve myself or do things to meet new goals.  It’s ok to rock what you have right at this moment while working to achieve other things.  Be proud of YOU every single second of the day.  That pride and encouragement, even if it just comes from you alone, can help push you forward.

So how about it?  I’m making a pledge to start rocking everything I got.

My ability to push myself at the end of a long run?  Rocking it.

My willingness to try a new or difficult yoga pose even if I faceplant?  Rocking it.

My desire to help serve others in the best way I know how?  Rocking it.

My hope to accomplish new goals and dreams?  Rocking it.

You don’t have to wait until you think you have what it takes to rock it.  Start now, this very second.  You have everything you need in this moment.  Even if you don’t feel that way, act like you do.  I bet pretty soon you won’t have to be faking it. rock
