Cranberry Chia Pudding

I feel like cranberries are the Brussels sprouts of the fruit world.  You either really like them or really don’t and often the reason you like or don’t like them is the way they’ve been prepared.

Well, I’m going to try to bring you to the cranberry side if you aren’t already there. Cranberry Chia Pudding | Life Healthfully Lived Continue reading

Monday Full Of Happy

A lot of people, myself included, tend to start Monday with a case of the ho-hums.  The weekend is over, we had to wake up early again today, we have lists of things to do, and Friday is so far away.  We focus on all the negative and that can really bring down your week and just put you in a grumpy mood. Monday Full Of Happy | Life Healthfully Lived Continue reading

Spinach Artichoke Stuffed Mushroom

We have entered into the season of parties.  Office parties, family gatherings, downtown bashes.  Everywhere you look there seems to be another party celebrating the season.

And I love it. Spinach-Artichoke Stuffed Mushrooms | Life Healthfully Lived Continue reading

Three Thanksgivings

Three Thanksgivings in three days.  If you weren’t aware, that is a lot of food.  In the past, I probably would have worried about how I was going to navigate all that eating but this year I took a different approach.

I decided I wasn’t going to sit there and think about all the things I could or could not eat.  I wasn’t going to fret about going overboard and shoving as much food in my face as possible.  I was going to enjoy the people I was with, share the dishes I had made, and overall have a good time.  In short I was going to not be a control freak and have a good Thanksgiving.

And you know what?

It was one of the best Thanksgivings ever.  I spent time with the people I love and some I hadn’t seen in a long time.  I made a chocolate peanut butter pie that was a hit (and I promise to share it soon).  I laughed, I ate, I was thankful.

Like I said, one of the best Thanksgivings ever.

How was your holiday?  Did you get to see friends and family?  Eat any new dishes?

Thanksgiving Wild Rice

There is just something magical about sitting down to a Thanksgiving feast that warms my heart every year, and while the food is an important part of this day, there is something more.  Sitting around the table with my family and friends, enjoying my favorite dishes, saying what we are all thankful for, just makes my soul happy. Thanksgiving Wild Rice | Life Healthfully Lived Continue reading
