Simple Vegetable Millet

This meal was made on a Sunday night using whatever I had on hand.  I literally looked in my fridge/freezer/pantry and just pulled random things out that I thought might taste good together.  I never said the way I cook was glamorous, but this turned out really tasty and it was quick to put together.  I used millet but you could easily use quinoa or even brown rice, although you might need to cook for a little longer to make sure the rice is done.  Feel free to add whatever vegetables or leftovers you have on hand to this dish and make it your own!

Simple Vegetable Millet

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 cup vegetable broth or water
  • 1 cup frozen peas
  • 1 cup frozen corn kernels
  • 1/2 cup tomato sauce (I used some leftover homemade tomato sauce, but you can use store bought too)
  • 3/4 cup uncooked millet/quinoa/brown rice

 

 

 

 

  1. In a medium sauce pan, saute the onion and garlic with a little olive oil.  Once the onions are soft, add in the cumin and coriander and mix well.  Add in the broth, vegetables, and tomato sauce and bring to a boil.
  2. Add in your millet/quinoa/brown rice and stir everything together.  Cover your pot and reduce the heat to a simmer.  Cook for about 15 minutes (a little longer for rice) until all the liquid is absorbed.  Fluff with a fork and serve!

Try this version out first and then experiment with different flavors.  I think another good one would be to use Asian inspired flavors like ginger, five spice, and soy sauce.  Make sure to make enough for leftovers because this is even better the next day. Enjoy!

White Chili

While the calendar says that spring is almost here (technically it is already meteorologically spring, but that’s a whole different post), the temperatures here in the midwest have still been frigid.  True, we have escaped the “polar vortex” but it still isn’t quite t-shirt weather.  So in hopes to keep you warm and cozy, I have a slow cooker chili for you.  It is hearty and delicious and will make you feel a little less sad that it just snowed 4 inches in March.

White Chili

  • 2 cups dried cannellini beans, soaked overnight (you can use canned, but the flavor and texture is better with dried)
  • 1 1/2 cup frozen corn kernels
  • 1 large green pepper, diced
  • 1 onion, diced
  • 2-3 cloves garlic, minced
  • 4-6 cups vegetable broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1/2 tsp cayenne, more if you want a spicier chili
  • 1-2 tsp salt

1. If you are using dried beans (which you should!), make sure to soak your beans for at least 8 hours, preferably overnight.  You want the beans to be soft.  Once they are soaked drain and rinse them.  Take about 1 to 1 1/2 cups of the beans and puree them in a food processor or blender until they are nice and smooth.  Add this to your crockpot

2. Saute the onions, corn, garlic, and green pepper until the onions are soft and the pepper and corn have browned, about 7-10 minutes.  Add this to the crockpot.

3. Add in the rest of your beans and the vegetable broth.  You want the broth to just cover the contents of the crock pot by about an inch.  If you need more, you can always add liquid in at the end.  Next, add in your spices and stir to combine everything.  Cook on low for 6-8 hours.  Once it’s done, check that there is enough liquid and add a little salt if needed.

You could easily add cooked and shredded chicken or pork to this chili and I might add that it tastes really good with cornbread and topped with sour cream or greek yogurt.  You could even top it with some of my avocado cream and it would be even more amazing!  Enjoy!

I know that I usually have a recipe for you on Friday, and I promise that I have some more coming your way soon, but I wanted to take today to try and find out what you are looking for when it comes to food.  Do you want more breakfast ideas?  More dinners or desserts?  Snack ideas?  I want to makes sure that I am putting out content and recipes that you guys find helpful and will actually use.

I don’t get much feedback on the things that I post, other than to see how many views each page gets per day.  I would love to actually hear from you guys about what works for you and what doesn’t.  I want my blog to actually be helpful and not just another voice in a huge crowd.  Believe me, there are hundreds of health and food blogs out there and I appreciate that you choose to come and take a look at mine.  To keep you engaged and coming back for more, I need to know what you guys want!

So comment on posts you like.  Let me know when you try a recipe and it works out deliciously (or not).  Ask for new ideas or recipes.  All of these things can help me make this blog even better and give you the things that will help you on your healthy journey.  My goal is to help anyone struggling to lead a healthier life.  I have been in that position, just starting out and having no clue which way to turn.  I hope that this blog can end that struggle for at least a few of you!  Give me your opinions and I will do my best to make this blog what you need and want!  Have a great Friday and an awesome weekend!

Healthy Doesn’t Have to be Hard

Hopefully all of you made it through the polar vortex and have thawed out just a bit.  Thankfully we made it through with minimal damage, only one pipe burst.  It was fixed quickly and didn’t cause too much stress, that was good!

This past weekend I was thinking about my “health mission”.  What did I want my message to be to the readers of my blog, people who come to me for advice, and eventually people that work with me one on one?  I narrowed it down to two main ideas.  The first being not everyone will become/stay healthy in the same way.  I’ve talked about this before on the blog.  We are all unique and our bodies function and work in different ways.  What may work for me might not necessarily work for you, and that is ok!  This goes for how you eat as well as how you exercise.

The second message I want to share is that healthy does not have to be hard.  Many of you reading this right now are thinking otherwise.  You have tried to get healthier numerous times, but always end up right where you started.  Some of you believe that in order to become healthy you have to follow complicated rules, stick to strict schedules/menus, or buy fancy and expensive equipment.  While you can do those things, they are not at all necessary to become healthier.

When I first started out, I also thought I had to get fancy.  I figured that following a fad diet and working out with a special routine or equipment was the only way to be the healthy person that I wanted to be.  By trial and error, I learned that it was actually much simpler than I first believed.

The biggest thing that you need to become healthier is the desire.  You have to be in a place where you truly want to start this journey.  Otherwise you will keep failing or quitting or not giving it your all.  Once you find that motivation, the rest is fairly simple.

In terms of eating, you don’t need to buy into fancy diets or food systems or companies.  Get rid of all processed food products and then start experimenting.  Do you do well on a more plant based diet or do you thrive with more meat?  Maybe you do better on a high fat diet full of quality, healthy fats.  Or you find that more whole grains is your thing.  Whatever it is, make sure you feel right and can go about your day without misery or gnawing hunger.

When it comes to exercise, there are so many inexpensive and simple options.  The main goal is to move daily in whatever way gives you the most joy.  Don’t like running?  Then don’t waste hours on the track hating your life.  Think yoga is crazy?  Then don’t sign up for a hot yoga class.  Again, experiment with a bunch of different forms of exercise.  Maybe something as simple as walking gives you what you need or perhaps you learn that you love weightlifting because it makes you feel awesome.  The most important thing is to figure out which form of activity brings happiness to your life and doesn’t feel like a chore.

When it comes down to it, these are very simple ideas and strategies.  Yes, it can seem hard to completely overhaul or change your life.  Start small.  Focus on changing one meal a day or adding fifteen more minutes of exercise to your day.  Once you master those add in more.  Realize that this is a process and it can be a very simple one.  What makes you feel happy and full of life and energy?  Find that and the rest will fall into place!

Pumpkin Gnocchi

I’vePumpkin Gnocchi | Life Healthfully Lived always wanted to make fresh pasta, but it also intimidates me.  I worried that I would mess it up and just get frustrated.  Well after mastering another one of my culinary fears, a poached egg, I decided that I could take on pasta.

I am pleased to report that it was a huge success and now one of my favorite meals!  This isn’t a typical gnocchi, I’ve tweaked it just a little.  Italian grandmothers everywhere will probably want to beat me with a wooden spoon, but I think this is pretty darn close to the real thing in texture and taste.

If you have some extra time on the weekend, give this recipe a shot.  I think that you will be surprised at how easy it is to make and how tasty it is to eat!

Pumpkin GnocchiPumpkin Gnocchi | Life Healthfully Lived

 

  • 1 cup brown rice flour, plus more for rolling the dough
  • 1/4 cup psyllium husk (my grocery store sells this in the bulk section, but check in the spice or health food section too)
  • pinch of salt
  • heaping 1/2 cup of pumpkin or butternut squash puree
  • 1/4 cup vegetable broth, plus more if dough gets too dry

 

  1. In a large bowl mix together all your dry ingredients.  Then add in your pumpkin and vegetable broth.  Mix everything together (I find a wooden spoon works best).  Once everything is incorporated, let your dough sit for about 5 minutes.
  2. The dough will be soft, but if it is too soft or wet add in a little more flour.  If it isn’t holding its shape or is too crumbly add in some more broth.  Once you get the right consistency, take the dough out of the bowl and knead it a little into a good size ball.  Don’t get frustrated if it takes a while to get the dough just right.  It takes a little time.
  3. Cut your dough into four equal sections.  Then take each section and roll it out into a medium size rope.  Don’t make it too thick or too thin because then it won’t cook properly.  Cut each rope into about 5 or 6 little gnocchi’s.  Press each one down with the tines of a fork.  Continue this process until all your dough is used.
  4. In a medium saucepan, bring about 4 cups of water to a boil.  Drop in 10 to 12 gnocchi at a time and cook until they float to the top.  Pull them out with a slotted spoon and continue until all the gnocchi is cooked.

Now at this point you could go ahead and eat the gnocchi as is, but I like to saute them with a little olive oil, sage, and minced garlic.  I have also sauteed them with pesto, which was delicious!  I would recommend keeping whatever topping you choose light.  A tomato or alfredo sauce might overwhelm the gnocchi, and that is just no good.  I know this recipe seems a little daunting, but trust me, you can do it!  The more you make it the easier gets and you can be enjoying fresh gnocchi all the time.  I haven’t tried it yet, but if you wanted to make an extra batch of gnocchi and freeze it after it has been boiled, I bet that would work.  Now go make some delicious pasta!Pumpkin Gnocchi | Life Healthfully Lived
