I’ve said time and time again, I am not a baker.  I’m more of a create things on the fly, see if this flavor works with that one, throw a little more of this in there, wibbly-wobbly home cook.

Baking is a science and if you put too much of one thing or not enough of the other, you end up with a pile of inedible mush.  Trust me.  I know from experience.

But something about Christmas time makes me put on my big girl baking pants and bust out baked good after baked good.  I usually pick one day and spend the whole day making cookies, candies, bars, cakes, and even a few pies.  My kitchen is a disaster afterwards, but I end up with quite the mountain of sweet treats.  Which leads me to my question for the day:

The fat kid in me wants to shove them all in my mouth at once and wash it down with a big ol’ glass of eggnog.  Dairy-free of course.  Come on, I’m not an unhealthy beast.  I can almost justify this gluttony with the fact that I make “healthy” treats.  I don’t use refined sugar, I try to use real food ingredients where I can, and most of my baking is done without dairy.

But they are still treats.  Desserts.  Sweet things.Holiday Baking | Life Healthfully Lived

And you can overdo it even with “healthy” treats.  Eating one cookie can lead to eating five cookies, can lead to eating all the desserts.  Again, trust me.  I know from experience.  I’ve also gone to the other extreme and completely refrained from eating any treats at all.  That is almost as damaging because you feel like you’re missing out and overeat on everything else.

Plus, what fun are the holidays without some Christmas cookies?

So, in my household, I try to strike a good balance.  I still go on my big Christmas bake-a-thon, and I still eat a few of my favorites, but then I share the wealth.  I send some with Adam to take to work.  I give some to friends and family.  The building supervisor and neighbors get a tin of treats and I bring some along to family gatherings.  That way I’m not tempted to turn into the Christmas cookie monster and I still get to enjoy the fun of holiday baking.Holiday Baking | Life Healthfully Lived

I also make sure that the rest of my diet is in balance during this time of year.  I try to get as much water as I can, eat plenty of vegetables, and keep up with my normal fitness routine.

Because Christmas doesn’t have to be an all or nothing time of year.  You don’t have to feel guilty about eating a cookie and you don’t have to feel the shame of eating all the cookies.  Find a balance that works for you and just enjoy the season!Holiday Baking | Life Healthfully Lived

Simple Gifts For The Healthy Cook | Life Healthfully LivedIt’s the most wonderful time of the year!!  I am approaching Buddy the Elf levels of holiday cheer over here in Chicago and it’s awesome.  I spent all yesterday putting up our Christmas decorations while of course watching Christmas movies and listening to Christmas music.  Can I fit one more Christmas in this paragraph?  Yup!

I was thinking about writing a post on how to stay healthy during the holiday season, but I feel like that gets written over and over every year.  Yes, it’s hard to stay on track during this time of year when there are a thousand opportunities to eat cookies and stuff yourself with a large dinner, but it isn’t entirely impossible.  And you know what?  It’s ok if you go a little overboard every now and then.  I like Kathy’s approach to healthy eating over at Kath Eats Real Food.  Healthy is a squiggly line.  Sometimes it will be up and sometimes it will be down, but overall it’s about a healthy balance.

So in lieu of the tips and tricks to eat well during your Christmas and New Year’s celebrations, I am going to tell you to buy presents.  Not for me (although if you’re feeling it, I am in desperate need of this Vitamix.  Yes, desperate need), but for the cook/cooks in your life.  You don’t need a ton of fancy utensils to eat well, but there are a few basics that I use over and over again that can really make a difference in the kitchen.  So here is a gift list for some simple tools that can make healthy eating easy and even a little fun!

I use a spatula pretty much every day.  From scraping things out of the food processor or a bowl to making scrambled eggs, a spatula is a must in my kitchen.  Plus you can find some cute ones over at Target for less than $5.  These would make a great stocking stuffer!

I’ve raved about these over and over again, but that’s because they are awesome.  A Silpat is pretty much reusable parchment paper.  Nothing sticks to these things so you can roast vegetables, bake cookies, roll out bread dough, and even make chocolate bark without working about half the food sticking to the pan.  I have two that get used regularly and they have lasted me a long time.

Not a flashy or exciting gift perhaps, but a very useful one.  You can use these for more than grinding fresh pepper, which you should be doing.  No one needs to use pre-ground pepper when it’s so easy to do fresh.  Just ask Alton.  You can use it to grind coarse sea salt into a finer powder, seeds like cumin, fennel, or grains of paradise, and you can use it to make your own spice blends.  This is a super versatile gift and one that is sure to be used over and over.

If you are a leftover junkie like me (and you should be after I gave you all of these wonderful ideas!) then these will be a must.  No more plastic containers that always lose their lid, get stained or smell, and that will inevitably melt at some point.  These dishes are great for leftovers, can go in the freezer, and are perfect portions to stick into your lunchbox for a healthy lunch at work or school.

Ok, so this might be the one splurge item on this list, but it is worth it.  Actually, you don’t have to spend a ton on a food processor because I made do with a secondhand Black & Decker for many years before Adam decided to upgrade mine for our anniversary.  Food processors are great for nut butters, chopping a ton of vegetables, making dough, and pretty much anything else you can think of.  Even though this is pricier than the other things on the list, you will use it enough to justify the cost.

A Very Dawson Christmas

Hello!  I hope that you all had a fabulous Christmas and were able to enjoy time with friends and family.  I know that the Monday after a holiday can be a little bit of a bummer, so I thought that I would share pictures with you of my Christmas celebration to cheer you up.  There are even pictures of cats, so they are automatically better!

 

Adam and I have started a little tradition by celebrating our own Christmas after actual Christmas.  We spend the day in our pj’s watching Christmas movies, opening presents, and making delicious food.  This was our third year doing this and it was one of the best!

Our Christmas tree and the stockings hung by the (faux) chimney with care.  Plus the first of many pictures of Olaf.  It was his first Christmas and I think he loves it just as much as I do.  Our other cat Dot wanted nothing to do with the festivities and slept in the bedroom all day long.

Speaking of cats, of course they have their own stocking and we fill it with new toys for them.  Olaf actually managed to get all of the stuff out of the stocking all on his own.  He liked the laser pointer and this yellow stuffed dog the best.

He’s pretty adorable.  Us humans open our presents over the course of the day.  Every time we start a new Christmas movie we open another present.  I would say that this year was a good year for both of us.  Adam got a new beard trimmer, a t-shirt, books, and candy.  I got a new teapot, oven mitts, and books/cookbook.  Apparently we both think alike because our big gifts to each other were new bags.  I got Adam a new leather messenger bag for work so he could look all fancy and professional and he got me an awesome new black purse that is much better than the bright orange paisley tote bag that I have been using for the past few months.

The other fun part of our Christmas is making a bunch of food that we don’t normally make.  This year we made pretzels, which were really easy and fun to make.  I also made some fried plantains and egg nog, devoured before I could take pictures.  For an appetizer I made spinach/artichoke dip without any dairy (so good, I’ll share the recipe soon!), and we had some pumpkin chips to dip.  Then for Adam’s dinner I made slow cooker italian beef and he made homemade buns.  I had some delicious butternut squash seasoned with some new seasonings I got from Adam’s side of the family.  It was an awesome feast!  There were also a variety of cookies and treats for dessert!

Christmas is one of my favorite holidays and I really love that Adam and I have been able to start some of our own traditions.  On actual Christmas this year we were able to spend the day with both sides of our family.  We started the day with my parents and my sister and her fiance and then headed over to Adam’s grandparents for Christmas dinner and were able to see his (many) aunts, uncles, cousins, as well as his mom and his stepdad.

Overall it was a fabulous holiday.  We were able to spend time with so many family members and shared and made plenty of new memories.  My heart is full and I can’t wait to see what the new year brings!  Have a great rest of the week and Happy New Year!

Friday Favorites: Christmas Edition

CHRISTMAS!!!

I don’t care if I’m 27 years old, I still get as excited as a small child about Christmas.  Fall may be my favorite season, but without a doubt Christmas is my favorite holiday.  I love all of the traditions that come along with this holiday.  I love the gathering of friends and family.  I love the food and treats that only come along this time of year.  I love all the shows and specials and movies that come on TV around this time.  I love walking outside right around twilight with a light snow falling.  As cheesy as it may sound there really is something magical about Christmas.  I still wake up at 4 am on Christmas morning and sneak downstairs to look at the tree and the stockings and take in the beauty of the day.  I know that some people can’t stand this time of year.  They don’t like the commercialism of the season, they don’t like the rush of activity, and the never ending list of things to do.  But I think if we can all remember that feeling of magic that comes very early on Christmas morning and the true gift that we were given, just maybe we can all enjoy Christmas just a little more.

Special Treats

I mentioned before that I love the food that comes along with this season.  I actually love food, but I really like the seasonal treats that pop up.  Things like eggnog, cookies, and hot chocolate are amazing.  I have actually been slowly working through some of my favorite childhood treats and making them a little healthier so that I can enjoy them once again.  Some of my favorite “re-dos” have been eggnog and hot chocolate.  I also like this version of mexican wedding cakes and I have been working on a healthier chocolate covered peanut butter balls.  It’s fun to find new ways to enjoy treats that I didn’t think I could.  Plus it’s nice to join in with everyone else and enjoy a cookie or two!

My Cranberry Sauce

I know, another food thing.  I like to eat!  But seriously I can’t get enough of this cranberry sauce.  I put it on everything and sometimes just eat it with a spoon for a snack.  It is the perfect combo of sweet/tart/spicy/awesome.  If you haven’t made it yet, go to your kitchen immediately.  I’m serious.  Go.

Downtown

My family has a tradition of going downtown each Christmas.  We go to the Christkindl market, look at the windows at Marshall’s, go out to eat, and just take in all the Christmas sights.  Now that I live in Chicago, I can go walk around downtown whenever I want and it still hasn’t lost it’s appeal.  I like seeing all the lights and decorations and people.  I have gone a few time this year and just walked up and down the mag mile.  Maybe I’m weird, but I just like being out and about during this time of year even if I have nothing to do.  I told you I love Christmas, and I really do love everything about it!  This weekend we’re actually heading downtown for our “official” trip and to celebrate my sister’s birthday.  I can’t wait!

Christmas Movies

Who doesn’t like Christmas movies?  There are so many good ones, but a few of my top ones are Elf, How The Grinch Stole Christmas, The Santa Clause, Scrooged, and Santa Clause is Coming to Town.  There are a million more and I probably own half of them.  When Adam and I celebrate our own little Christmas we spend the day opening presents, eating appetizers, and watching all of our movies.  It’s one of my favorite new traditions that we started when we got married.

I know this was kind of a personal Christmas edition of Friday Favorites, but I wanted to help spread some Christmas cheer.  Of course I could just take Buddy the Elf’s advice and sing loud for all to hear!  I’m going to be taking a little break from regular blog posts until after the new year so I can enjoy this time with my family.  So until then, Merry Christmas and Happy New Year!

How To Not Be Overwhelmed This Season

There are a little over two weeks until Christmas arrives.  Try not to start hyperventilating like I did yesterday when I realized how close it is.  Every year I tell myself I am going to be super organized when it comes to buying presents, decorating, baking, and everything else that comes with this season.  And every year right about this time I’m still trying to get my act together.  If you’re like me you’re probably wondering how you can get everything done in these last few days, while still getting all of your normal tasks completed.  Don’t worry, it is possible to get everything done, go about your daily life, as well as enjoy a little bit of the holiday season.  Here are a few tips to help keep you holly and jolly this year.

Make Lists

And check them twice.  Seriously though, make lists for everything.  Presents you have to buy, parties you’re going to, cookies you have to bake, if it needs to get done before Christmas put it on a list.  If you try to keep everything in a mental list, trust me you are going to forget something.  I like having one master list of everything and then smaller lists of specific things like gifts/cookies/parties/etc.  This is the age of the smartphone and tablets, so it is really easy to have your lists right at hand.  Or maybe you’re like me and you like having a good old fashioned hand-written list.  Either way having a visual representation of what you need to get done will help, plus it feels really satisfying to cross things off your list.

Set up a schedule

With about two weeks left you still have enough time to spread out all of your tasks.  Go through your list and make a schedule of when you need to get things done.  Maybe you can bake cookies a few days ahead of time and freeze them or you have a free Saturday that you can dedicate to wrapping all your gifts.  Plan out the next few days and try to get a few things off your list done.  Having a deadline that is well before Christmas will save you from running around like a crazy person On Christmas Eve.  It doesn’t have to be a strict schedule that you have to stick to, just a general idea of when you want things done.

Delegate

If you’re like me, you’re a little bit of a control freak.  You like things done a specific way and at a specific time.  The only way to get something done right and right away is to do it yourself.  Believe me that attitude will not make your holiday season any easier.  Learn to let a few things go and delegate jobs to others.  You can’t possibly do every single thing on your list without going bonkers.  Let friends and family help you and give some of your tasks to them.  It will help ease your burden and it will let you enjoy Christmas.  Plus it can be fun to have others help you and start new Christmas traditions.

Plan some fun

Yes your calendar is probably jam packed at this point, but try to make sure that not everything you have scheduled is work.  It is easy to get wrapped up in all of the buying/gift-wrapping/baking/food-prepping that goes into this season and totally miss out on all of the fun things.  Take a break from all of your work and go see a Christmas concert or movie, look at Christmas lights, go caroling, or build a fire, make some hot chocolate, and listen to a Christmas CD.  Whatever is your favorite holiday activity, make sure you take some time to enjoy it.  It helps to refocus your attention on all the fun and good of this holiday instead of becoming Scrooge who resents all the work.

 

I think the most important thing to remember is why we really celebrate this time of year.  It isn’t all about the presents, the food, the shows, the concert, or the rush.  It’s about our families and friends coming together to celebrate the gift that we were given all those years ago.  It’s about spreading the cheer of this time of year to those who might not feel the Christmas spirit.  It’s about being grateful for the immense amount of blessings that you have received this year and trying to pay it forward as best we can.  Sure, parties and presents are fun and a part of the holiday, but they aren’t everything.  Take a deep breath, turn on some Christmas music, and enjoy the most wonderful time of the year!
