Happy Monday! I’m all sorts of in a good mood thanks to the beautiful weather we’ve been enjoying lately. Spring has sprung round these parts and it’s here in full force. Trees are budding, grass is green, flowers are blooming, and bugs are back.

I think for the past, oh billion Monday’s or so, I’ve mentioned making nori breakfast wraps as part of my meal prep on the weekends. I think I’ve mentioned an equal amount of times that I would share with you what they are… and then never really did.
Well, I’m changing that today! Because I’m a responsible adult! But mostly because I actually remembered to take pictures throughout the process of making them.

Every year on our birthdays, my mom would make whatever we wanted for dinner. It could be anything. I’m pretty sure if we asked for cinnamon rolls with a side of pickles for dinner, my mom would have made it. Because she is awesome.
While my sister would usually choose a birthday dinner of chicken pockets (Pillsbury croissant dough stuffed with a creamy cheesy chicken mix) and macaroni and cheese (good old Kraft), my choices usually varied.
One year I wanted stroganoff.
Another year I asked for breakfast for dinner.
But a few years in a row I asked for spaghetti casserole.
It wasn’t anything super fancy but it was super comforting and delicious. Cheesy, meaty, saucy comfort food.
