What I Ate Wednesday: Camping Edition

I haven’t done a What I Ate Wednesday post in a few months and I thought it would be fun to share a day of camp eats with you!  A lot of people (myself included a few years ago) think that camp food revolves around a few main staples.  Grilled meat, big pots of chili, sandwiches, and s’mores.  Sure, those are all easy and great camping meals, but you can cook SO much more outdoors.  Plus, everything tastes just a little better when it’s kissed by a smoky campfire. What I Ate Wednesday: Camping Edition | Life Healthfully Lived Continue reading

My Favorite Camping Recipes

Adam and I are off to our first camping trip of the summer and I am super pumped.  I know camping isn’t everyone’s cup of tea but it’s nice to head outside and get away from our phones and computers and TV for just a few days.  Plus, I get to cook over an open fire and somehow, everything is just tastier.  My Favorite Camping Recipes | Life Healthfully Lived Continue reading

PB & J Bites

Katie tidbit #32: I used to thoroughly dislike peanut butter and jelly sandwiches.  Crazy, right?  Like, what child DOESN’T like peanut butter and jelly?  Ok, maybe the kids who are allergic to peanuts might not enjoy the classic PB & J, but they have an incredibly valid reason to dislike that amazing combo.

I just remember every time I opened my lunchbox to find PB & J staring back at me I was a little less than enthused.  I will admit PB & J was better than the we-ran-out-of-sandwich-meat-so-here-is-the-last-of-the-cheese sandwich.  Those were worse than PB & J.  Sorry Mom. PB & J Bites | Life Healthfully Lived Continue reading

Plantain & Pepper Bake

I think I’m the worst millennial ever.  I just don’t get a lot of trends that we millennials are supposed to be all about.  I don’t follow the hip lingo and I’m def not up to date on the hottest celebs.  Ugh.  I hate that I just said celebs.

I’m also not super savvy at social media.  I know I should be because I’m a blogger, but sometimes it’s just too much and I can’t keep up.  I’ve decided to limit myself to just a few even if that means being behind the times or whatever horrible things will happen to those of us not on every single media platform. Plantain & Pepper Bake | Life Healthfully Lived Continue reading

Thai Cauliflower Crumbles

Ah, the humble cauliflower.  Back at it again to make life awesome.  Seriously, who would think that a cauliflower could do so many things?  Not I, my friends.  Not I.

Anywho, I wasn’t going to share this recipe in its own post because it’s a part of Friday’s recipe.  But after I made it and tried it I decided it was good enough.
