Key Lime Popsicles

IKey Lime Popsicles | Life Healthfully Lived am excited about this one you guys.  One of my favorite desserts is key lime pie.  I love the tanginess of the lime and the fact that it isn’t overly sweet.  And key lime cheesecake?  Forget about it.  Creamy, tangy, limey goodness.

Back in the day, my family would go to this restaurant called Omega.  They were a greek place (duh, their name is Omega) and they had all the food.  Seriously so much food.  You could get a whole 3-course dinner which would include soup/salad, an entree, and then dessert.  You could also order a la carte, but who would do that?  Crazy people that’s who.  Anyways, back to the 3-course feast.  They had a huge dessert counter and big glass cases that would display hundreds of cookies, cakes, and pies.  After our dinner, my sister and I would run to the dessert counter to choose what we were going to get.  I would make the obligatory lap around the cases, but I already knew what I was going to get.  A big slice of key lime cheesecake.  It always hit the spot and no matter how full I was from my massive dinner, I had a little room for that cheesecake.

I haven’t had key lime pie or cheesecake in many years, but I still crave that tangy goodness especially around summer.  I decided it was high time that I made a key lime dessert that would satisfy my craving without being totally decadent.

My one hurdle was the sweetened condensed milk.  That is one of the key ingredients in key lime pie and there was no way I was including it in my “healthy” version.  I thought about doing just plain coconut milk and leaving it at that, which would certainly work.  But I decided to take it a step further and made a coconut condensed milk.

This key lime popsicle is cool, creamy, slightly sweet, and wonderfully tangy.  It passed the husband test (although I handed it to him right as he was in the middle of a video game. Gamer wife fail) and he ate it with glee.  It also doesn’t require a ton of ingredients and once you make the condensed milk, it takes like 2 minutes to put together.  After that, all you have to do is wait for it to freeze…

Key Lime Popsicles

  • 1 can full-fat coconut milk, unsweetened
  • 1/4 cup maple syrup or honey
  • 1/2 to 2/3 cup lime juice (I used 2/3 but I like it very tangy, use less if you don’t want it as tart)

  1. Shake your can of coconut milk well and pour into a medium saucepan.  Bring to a low boil over medium heat stirring occasionally.
  2. Once the milk is at a boil, whisk in the maple syrup or honey and keep at a low simmer for about 15 minutes, stirring frequently so it doesn’t scald.  The milk should get a little thicker and reduce down just  a little.
  3. Remove from heat and pour into another bowl and let it cool completely.  Once it’s cool add in lime juice and zest.  Stir it all together.
  4. Pour the mixture into popsicle molds and let them freeze for at least 2 hours, overnight if you can.  If you don’t have popsicle molds you can use an ice cube tray and toothpicks or dixie cups and popsicle sticks.  Key Lime Popsicles | Life Healthfully Lived

Tomato Cucumber Salad and Old Favorites

Does anyone else watch TV shows that they have seen a million times?  I do.  All the time.  While I love watching new shows and finding new things to love, a part of me loves the comfort of an old favorite.  If you know anything about me, you can probably guess which show I always turn to.

I own all of the episodes on DVD (even though they are now on Netflix, I still watch the DVD version because there are scenes that are cut out on the Netflix versions) and I will routinely watch them over and over.  I can pretty much quote whole episodes, recognize obscure lines, and know what each scene looks like.  If Marta Kaufmann and David Crane called me up and told me they needed someone to recreate every single episode on their own, I would be perfect for the job.

Why do I continue to watch Friends over and over and over again?  It’s a security blanket.  When I’m feeling blue, I know one of Chandler’s jokes can cheer me up.  When I’m under the weather, there is no better medicine than Phoebe’s ditzy yet surprisingly poignant logic.  I see myself in some of Monica’s obsessive tendencies, Joey gives me encouragement that even if I’m not great at something if I keep at it I can achieve some kind of greatness, and who doesn’t love the on again off again relationship between Rachel and Ross?

It also connects me to the people I love.  My mom, sister, and my friend Ashley are all just as big a fans as I am when it comes to Friends.  I can randomly text them lines from the show and they know exactly what episode I’m watching.  I often relate my life to certain scenarios and they know exactly what I mean.  So to make a long story short, Friends is awesome and I’ll never stop watching.

This simple salad is almost as awesome as Friends.  It’s the perfect summer side dish because it takes 2 minutes to put together, doesn’t require a stove or oven, and uses in season vegetables.  You probably already have most of the ingredients, so whip up a big batch to eat all weekend long because the longer this salad marinates, the better it gets!

Tomato and Cucumber Salad | Life Healthfully Lived  

  • 2 large cucumbers, peeled and sliced
  • 16 oz cherry tomatoes, cut in half or quartered
  • 3/4 cup red onion, diced
  • 1/4 cup white wine vinegar
  • 1/4 cup olive oil
  • 2 tsp oregano
  • 2 tsp basil
  • salt and pepper to taste

  1. Wash, peel, and cut the cucumbers and place into a large bowl.  Wash and cut the tomatoes and add those in along with the red onion.  Mix everything so it’s well combined
  2. Pour in the vinegar and olive oil and stir once again.  Finally, add in all the seasonings.  Mix everything really well.
  3. Cover and place in the fridge and if possible allow it to marinate overnight.  Once it has marinated, taste and adjust any seasonings.

How To Stay Hydrated

Water

Water is important.  Not to be Captain Obvious here, but without water you and your body do not function.  Your body needs an adequate supply of water to carry out it’s everyday normal functions.  Water helps move your blood through your system, which in turn helps your organs function, which then make you function.  Water helps you perform at your best, not just with normal things like breathing but also with tougher things such as exercising.  Being dehydrated even just 1% decreases your performance by 5%.  Water also helps to keep your metabolism going, your skin glowing, your hair shiny, and your appetite in check.  Just to make things even tougher, you’re constantly losing water.  Not just through sweat, but even things like exhaling cause you to lose water.  So you NEED to make sure you’re replacing all that water loss.

Summer time is usually when we really keep tabs on our hydration.  Nothing like 90 degree weather to help remind you to drink water.  But as we start to enter into fall and the colder months you still need to keep tabs on your hydration, maybe even more so than in the summer.  During the winter (I know, I know, you don’t want to even be thinking about winter, but it’s coming) it is so easy to forget to drink water throughout the day.  You’re not sweating profusely, the sun isn’t blazing down on you, and let’s face it, snuggling in front of the fireplace with a big glass of water doesn’t sound too cozy.  But the colder months tend to be drier which can suck moisture out of your body.  And because your body needs all that water, you have to make sure you replace it.

If you find it hard to get enough water into your day, or you need some ideas on how to make water a little more fun (it can be a little boring sometimes), here are a few tips to help keep you hydrated and healthy!

  • Carry a refillable water bottle with you all the time.  If you have water with you at all times it makes it easier to remember to drink water throughout the day
  • Find a fun water bottle.  It might sound silly, but having a cool or new water bottle might make you drink more water.  A while back I bought this camelbak water bottle and the straw was so cool that I found myself downing about three full bottles a day.  While I didn’t enjoy running to the bathroom every 2 minutes, I did get adequate water intake!
  • Add fruit.  If you’re one of those people who hates the taste of water or thinks it’s so boring, try adding some fruit.  Think beyond lemon or lime and try fresh berries, watermelon, or even things like mint leaves.  Having a little natural flavor can help you to drink more water
  • Try some ice.  For me, the idea of a room temperature glass of water is not appealing.  Adding ice cubes to your water can help make it more palatable, plus ice cold water may rev up your metabolism and help burn more calories.
  • Eat high water content foods.  While you still need to make sure you are drinking water, you can also eat your water.  Foods that have a high water content can help to contribute to your overall water intake.  Eat things like celery, lettuce, leafy greens, or melons (especially watermelon!) to help your water.
  • Set a schedule.  If you’re really busy throughout the day and just forget to drink water, set a reminder on your phone to have a glass or so every hour.  Or you could do this and make sure that you’re drinking a certain amount by certain times during the day.

Making sure that you get enough water is a really important part of being healthy.  The rule for a long time has been eight 8 oz glasses a day, but don’t focus on a certain number of glasses or ounces.  As long as you drink water throughout the day, you should be properly hydrated.  If you workout, make sure you replace the extra water lost through sweating.  Unless you’re an Olympic athlete, just stick with plain water.  You don’t need any fancy rehydration drink full of vitamins and electrolytes.  A healthy and balanced diet along with enough regular water will help you function just fine!  Long story short, go drink some water!

Avocado Chicken Salad

A few weekends ago, Adam and I went to a cookout for his grandpa’s birthday.  It was great, full of family, friends, and food.  Oh was there food.  Now let me say that Adam has quite a large family.  Nine aunts and uncles, plus their spouses/significant others, plus all their children so there needs to be a lot of food.  Along with all the appetizers and side dishes, there was a mountain of chicken.  I am not exaggerating.  There were three different kinds of wings, grilled chicken, marinaded chicken, smoked chicken, chicken chicken… You get the idea.  Long story short, we were sent home with a bag of chicken.  After adding chicken to stir frys and frittatas, I wanted to come up with a simple and tasty chicken dish.  Because it was uber hot, I went with a chicken salad.  It came together quickly and hit the spot on a hot summer night, plus it’s healthy!  So if you are loaded down with chicken, give this recipe a try!

 

Avocado Chicken Salad

  • 2 to 3 cups cooked chicken, shredded
  • 1 large avocado, diced
  • 1 tbsp mustard (I used spicy brown mustard)
  • 1 tbsp tahini (sunflower seed butter would work well too)
  • 1 tbsp lemon juice
  • 1/2 tbsp almond milk
  • 1/2 tsp basil
  • 1/2 tsp coriander
  • 1 tsp oregano
  • 1 tsp parsley
  • salt and pepper, to taste
  • corn kernels/celery, optional (but they add a nice crunch!)

 

1.  Shred your chicken and set aside.  In a large bowl, mash up your avocado pieces.  You want this to be fairly smooth, so make sure there are no large chunks.  Add in the rest of the ingredients, except corn/celery and chicken.  Mix together well.

2.  Add in chicken and corn/celery and stir to coat everything with the avocado.  Taste and add salt and pepper if needed.  You can serve this right away or let it cool in the fridge.

Pretty easy, right?  This goes well over lettuce, in tortilla shells, or on your favorite type of bun.  Don’t like chicken?  Try it with canned tuna or salmon.  Don’t eat meat?  Make it with chickpeas or your favorite kind of bean.  It’s a pretty easy recipe to adapt to your tastes.  It is also a good one to make a big batch of and share at a party or gathering.  Enjoy!

How To Repurpose Leftovers

I am a big believer in leftovers.  I think that they play a big role in eating good, healthy meals all week long, as well as helping keep food costs down.  I only cook for two people, but I tend to cook like there are four of us and make extras to have for lunches throughout the week.  One thing that I have noticed though is that people tend to get bored of eating the same thing over and over again.  If you get bored with having the same food, you might be more likely to switch back to your unhealthy eating habits.  Because we don’t want that, I wanted to share just a few ways that you can repurpose your leftovers and make a whole different meal with just a few minor adjustments.

 

 

Meats 

This might be one of the easiest things to turn into a different meal.  Summer time is the perfect time to pull out the grill and BBQ some meat.  When you do this, make sure to throw a few extra pieces of whatever you’re making onto the grill.  Now you have some extra meat to turn into lunches or dinners for the week.

  • Shred chicken or pork and make a stir fry by adding it to some vegetables, brown rice, and soy sauce.
  • Slice up steak or chicken and add to a salad
  • Use fish to make some simple fish tacos.  Just add some salsa or corn, cilantro, and squeeze a little lime juice over everything
  • Make a chicken salad with shredded chicken, celery, avocado and mustard
  • Add any kind of meat to a frittata

Vegetables

If you do your meal prep over the weekend, make sure that you cook up some extra vegetables however you like.  Grill, roast, or saute them and you can use them for meals throughout the week.  Summer time also means the garden is full and your farmers market is in full swing, so you might be loaded up with extra vegetables.  Here are some ways you can repurpose your vegetables for leftovers.

  • Roasted root vegetables, like sweet potatoes or parsnips, can be added to salads or cooked grains for a simple lunch
  • Root vegetables are also really good pureed into soup or a sauce for pasta.  Add almond milk (or whatever milk you like) for an extra creamy texture
  • Grilled eggplant can be made into a simple baba ganush
  • Grilled zucchini or summer squash can be added to tomato sauce for extra texture and flavor
  • Cooked vegetables can be added to stir frys, soups, frittatas, or sandwiches
  • If you have an overabundance of cooked vegetables, you can also freeze them to be used later

 

Grains

Grains are a great thing to cook in big batches and then just add to meals throughout the week.

  • Grains make a really good bed for stir fry, vegetables with sauce, or cooked meat
  • Add your favorite grain to a leafy salad for a new variation
  • Leftover pasta?  Use it up by making cold pasta salad.  Toss your favorite pasta with some olive oil, seasonings, and vegetables like cherry tomatoes or avocados for a delicious summer meal
  • Try adding cooked grains to your lettuce wrap for extra texture and oomph

 

Fruit

Fruit is also pretty abundant this time of year and you can make it into a few different meals throughout the week.

  • Use leftover fruit salad as a cereal, granola, or yogurt topper for breakfast
  • Freeze leftover fruit and use in smoothies or added to water for extra flavor
  • Make a quick toast topping by mashing up leftover berries and adding a little honey/cinnamon
  • Turn frozen leftover fruit into sorbets by blending them in a high powered blender or food processor

 

There are a ton of ways that you can vary your leftovers so that you don’t eat the exact same meal every single day of the week.  With just a little bit of prep work, you can have the makings of a healthy and new meal each day.  Get creative and see what you can make out of the meals in your fridge!
