DIY Wednesday: Tortilla Chips

ThisDIY: Tortilla Chips week is flying by because it’s already DIY Wednesday!  So far we’ve come up with our own spice blends and made some quick but healthy jam.  Feeling crafty yet?

I hope you enjoy these posts as much as I do.  I really like being able to make my own things at home because it saves money and ends up being a lot healthier.  So many people shy away from making their own stuff because they don’t think they have the time or skill.  Believe me I am not a pioneer woman who can spin yarn, preserve vegetables, and make my own clothes.  But you don’t have to be Laura Ingalls Wilder to make some food staples for you and your family.

Today will be the easiest and cheapest DIY yet.  You’re going to make tortilla chips in less than 20 minutes and it will only cost you about $.40.  Yes you heard me right, $.40.  You will never buy tortilla chips again after this post. Ok you might, but you don’t have to with this trick up your sleeve!

I use El Milagro corn tortilla shells for this because the ingredient list is extremely short (corn, salt, lime) and they are only $.33 at Aldi.  You can use any corn tortilla that you would like, just make sure to read the ingredients.  I also use a pizza cutter to cut the tortillas because it’s faster, but a sharp knife will work too.

DIY: Tortilla Chips

  • 1 package of El Milagro corn tortillas
  • 1 lime
  • salt
  • olive oil
  1. Preheat the oven to 375.  Using a pizza cutter cut the tortillas into chip size pieces.  On a parchment or Silpat lined baking sheet arrange the chips into a single layer.
  2. Squeeze the lime juice on to the chips and then drizzle the chips with a little olive oil.  You don’t need to drench them, just a little bit will work.  Then sprinkle with a pinch or so of salt.
  3. Bake the chips for 8-12 minutes checking often to make sure they don’t burn.  Remove from oven and let cool before devouring.

It’s that easy to have a pile of tortilla chips ready to scoop up delicious guacamole or salsa.  Enjoy and Happy Wednesday!

DIY Wednesday: Spice Blends

I’m starting a new Wednesday series, a DIY series.  Every Wednesday I’m going to show you how to make your own version of usually store-bought staples.  Companies want you to think you can’t live without their products, but you totally can.  It’s easier than you think, not to mention healthier and cheaper.

Today I’m going to show you how to make your own spice blends.  I used to buy these blends at the grocery store and thought nothing of it.  Then I started to read labels and noticed there were some funky ingredients in there.  Things like MSG and anti-caking agents.  Things that I did not want to be sprinkling over my food and ingesting.  So I started to make my own and haven’t looked back.  Make these when you have some free time and you will have all the seasonings you could ever want ready to go when you cook.

These are four of my favorite and most used blends.

1 tbsp onion powder

1 tbsp garlic powder

2 tsp dill

2 tsp parsley

1 tsp salt

1/2 tsp celery seed

1 tbsp dried onion, minced

2 tsp onion powder

2 tsp garlic powder

1 tsp dried mustard

1 tsp parsley

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

Pumpkin Pie Blend

1 tbsp ground cinnamon

1 tsp allspice

1 tsp ground ginger

1/2 tsp nutmeg

1/2 tsp ground cloves

Taco Seasoning Blend

1 tbsp chili powder

1 tbsp ground cumin

3 tsp garlic powder

2 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp cayenne pepper, optional (if you want a spicier mix)

Measure out all the seasonings, mix together, and then store in an airtight container like a mason or bell jar.  You can adjust the seasonings to your taste or remove the salt to make each blend salt free.

Use the ranch or onion mix for dips by adding to plain greek yogurt, sour cream, or plain cashew ricotta.

Use the taco blend in place of store bought packets and add either tapioca starch or cornstarch to help thicken the sauce you pour over your taco filling.

Sprinkle the pumpkin pie spice over oatmeal or cereal for a little taste of fall.

Of course you can use these blends anywhere, on your vegetables, in your marinades and dressings, in desserts or snacks.  It really just takes a few minutes to put these mixes together and the flavor and price can’t be beat.  So use your DIY skills and get to blending!

How To Make Your Own Snacks

Snacks can be a very important part of a lot of people’s daily diets.  They tide you over to the next meal, fuel you for your workout, or give you extra energy when you hit that late afternoon slump.  While I don’t snack much myself, I am a big supporter of snacks as part of a healthy lifestyle.  I’m not a supporter though of most of the snacks that we normally reach for.  I’m talking about the ones you find in a vending machine or on store shelves.  The pre-packaged, processed snacks that we often eat are not doing your health any good.  Believe me, I get the appeal of these snacks.  They’re easy, most of the time portable, and they taste good.  They are just so convenient, but they are also taking a toll on our health.  The good news is that it is really easy to make your own versions of most of the snacks out there, except these will be good for you, provide nutrition, cost less, and taste just as good if not better!

DIY Snacks

  • Trail Mix-  This is a tricky snack item in stores.  They seem like they are good for you with all their claims of organic and natural, but most of the time they are filled with sugar and other not so healthy ingredients.  It is much better to make your own, plus the DIY version will cost you a lot less.  Buy things like nuts (peanuts, almonds, pistachios, walnuts), seeds (sunflower or pumpkin), dried fruits with no extra sugar (cranberries, raisins, cherries), and dark chocolate chips.  Then just dup everything into a big bowl, mix it together, and portion it out into snack sizes.  Now you have a quick and healthy snack that you can grab and go!  If you can, buy all your components in bulk and that help keep the cost down.

  • Granola Bars-  These are another one of those sneaky snacks that can seem healthy but in the end are not much better than candy bars.  Luckily, it is really easy to make your own and there are a ton of recipes out there on the internet.  You can make your own Nutragrain bars, Larabars, or chewy granola bars.  Make them in big batches and freeze them so that you have a bunch ready to go
  • Chips & Dip-  Chips are a popular snack because no one can resist the crunchy and salty taste!  But those chips can quickly add up and soon you’re downing a whole bag along with dip.  You can make your own simple potato chips using my recipe here.  You can also make your own tortilla chips.  Just buy some corn tortillas (I like the El Milagro brand because of the price and short ingredient list), cut them into triangles, lay them in a single layer on a baking sheet, spray with a little olive oil and salt, then bake at 375 for 12 to 15 minutes.  Dips are also really easy and much healthier to make on your own.  Try my avocado cream, some salsa, or another one of my favorites, hummus!
  • Roasted Chickpeas-  I have seen a few versions of these in stores, and while some of them aren’t too bad, I’ve always found it easier to just make my own.  It is a lot cheaper and you can choose whatever flavors you want!  You can find my recipe here.

Don’t forget about things like fruit or vegetables as a snack too!  It is really easy to buy things like celery, carrots, cucumbers, and cherry tomatoes, then cut them up and portion them out at home for a quick snack.  Fruits like bananas, oranges, or clementines are really easy to transport because of their skins.  And who can resist one of my favorite snacks, sliced apples and peanut or almond butter.  Hard boiled eggs are also a great snack that travels well.

There are a ton of simple and healthy snack ideas that you can make yourself.  You don’t have to rely on store bought snacks to get you through the day.  Take a little bit of time to plan and make your snacks for the week and when it come time to rush out the door in the morning, you can feel good that your snack will help you stick to your healthy eating plan!
