Italian Pasta Bake

MozzarellaItalian Pasta Bake | Life Healthfully Lived that isn’t really mozzarella.  Confusing I know, but totally awesome.  There are tons of recipes out there for fake cheese as well as plenty of products that you can buy.  My issue with store bought “cheese” is that it’s usually full of ingredients that I would rather not ingest.

I’ve made cheese sauce before for my Fusilli N’ Cheeze, but I wanted to make a cheese that was a little thicker.  My goal?  To try and recreate the mostaccioli that Adam made for me when we first started dating.Italian Pasta Bake | Life Healthfully Lived

About a month or so into our relationship, Adam decided he was going to cook for me.  He made me his mom’s mostaccioli and it was delicious.  It was super simple, but watching him make that meal for me was one of the first times that I started to fall in love with him.  When I stopped eating gluten and dairy, mostaccioli kind of went out the window. But not anymore!

Don’t be freaked out by making “cheese” that isn’t really cheese.  It isn’t difficult and there really aren’t any weird ingredients unless you think tapioca starch is weird. It isn’t.  It’s just a thickener and helps make this cheese stretchy.  You could also use potato starch, but I like tapioca better.  Once you make the cheese, this is a really fast meal and a great one to prep early and pull out for a quick weeknight meal.

Not-Mozzarella, Mozzarella Italian Pasta Bake | Life Healthfully Lived

  • 1/2 cup raw cashews, soaked in warm water overnight
  • 1 tsp apple cider vinegar
  • 1 tsp roasted garlic
  • 1/2 tsp salt
  • 1 tsp olive oil
  • 2 1/2 tbsp tapioca starch (or potato starch)
  • 1 cup hot water
  1. Add everything to a blender and blend for 2 to 3 minutes until it is completely smooth.
  2. Pour the mixture into a medium saucepan and heat over medium-high heat.  Cook while constantly stirring.  After a few minutes, the mixture will start to thicken.
  3. Turn the heat to low and keep stirring it until it is very thick and stretchy.  You can use it right away or keep it in an airtight container in the fridge for 2 to 3 days.

  • 1 batch of Not-Mozzarella, Mozzarella
  • 1 batch of my tomato sauce
  • 1 package of gluten-free pasta, I used brown rice shells
  1. Preheat oven to 350.  Cook your pasta according to the directions on the package.  Drain and set aside.
  2. Get a 9 x 13 casserole dish and spoon a thin layer of tomato sauce on the bottom.  Next, put a layer of pasta and then top with tomato sauce.  Spread some of the cheese on top of that.
  3. Keep layering the pasta, sauce, and cheese until it’s gone.  Cover the dish with aluminum foil and bake for 25 minutes.
  4. Remove from oven and take off the foil.  Cook for another 5 minutes until the cheese on top is starting to brown on the edges.
  5. Take out of the oven and let it cool for 10 minutes before you serve it.Italian Pasta Bake | Life Healthfully Lived

Spinach Artichoke Lasagna

TodaySpinach Artichoke Lasagna | Life Healthfully Lived is my last day of being 27 years old.  27 has been good to me, but I’m excited to see what 28 has in store.  It’s weird to think that I only have two more years of being in my 20’s.  I can remember the day I turned 20 and thinking, “Finally! I’m not a teenager anymore.  I’m an adult and I’m important.”

While I’m important at any age, I was far from being an adult.  20 is barely not a teenager and I had so much I still needed to learn.  In all honesty, I still have a lot to learn and I think that is true for any age.  Except maybe 100.  Once you hit 100, you can pretty much do whatever you want and your excuse is I made it this long I think I’m gonna be just fine. Spinach Artichoke Lasagna | Life Healthfully Lived

I decided to make you a delicious dinner for my birthday, which now that I’m typing it out sounds backwards.  You should be making me a delicious dinner for my birthday.  Jeez, you’re lazy!  Making me do all the work on my birthday!

You know how delicious spinach artichoke dip is?  That was my inspiration for this lasagna.  Instead of cheese, I used bechamel sauce and artichokes along with a layer of spinach to create a creamy and delicious filling.  This meal can come together really fast if you use a jar of tomato sauce and a box of lasagna noodles.  But if you want to make everything from scratch like I did, I promise you won’t regret the time you put in. Spinach Artichoke Lasagna | Life Healthfully Lived

This is also one of those meals that is even better the next day and makes really great leftovers for lunches throughout the week.

See?  I’m feeding you even beyond dinner.  28 is making me a giver!

Spinach Artichoke LasagnaSpinach Artichoke Lasagna | Life Healthfully Lived

  • 1 batch of my tomato sauce or a jar of your favorite store brand
  • 1 box of gluten free lasagna noodles (I made these from Against All Grains)
  • 3-4 cups spinach leaves
  • 1 can artichoke hearts, drained and rinsed
  • 1 can full-fat coconut milk
  • 1/3 cup raw cashews
  • 1 tsp Italian seasonings
  • 1/2 tsp salt
  • 1/4 tsp celery salt
  • 4 tbsp nutritional yeast
  • salt and pepper to taste
  1. If you are making the tomato sauce and noodles get those ready and set aside.  If you’re using boxed noodles make sure they are cooked and ready to go.
  2. To make the bechamel sauce: In a blender or food processor, grind the cashews, Italian seasonings, 1/2 tsp salt, and 1/4 tsp celery salt into a fine powder.  Set aside.
  3. Heat a little olive oil in a medium saucepan over medium-high heat.  Add in 2 tablespoons of the cashew powder and stir to make a paste.  Cook until the cashew powder turns golden brown.
  4. Whisk in the can of coconut milk and keep whisking to combine the paste and milk.  Whisk in the nutritional yeast and salt and pepper.  Keep cooking and whisking the milk until it is thick enough to coat the back of a spoon.  Taste and adjust the salt and pepper to your preference.
  5. Pour the sauce into a blender and add in the drained artichoke hearts.  Pulse a few times to break up the artichokes, but don’t make it completely smooth.
  6. Now it’s time to build the lasagna.  Preheat the oven to 350 and get out a 9 x 13 casserole dish.  Put a thin layer of tomato sauce on the bottom, then a layer of noodles, a layer of artichoke sauce, a layer of spinach, and a layer of tomato sauce.  Keep going until you run out of noodles and make sure you end on tomato sauce.
  7. Cover with aluminum foil and bake for 25 minutes, until the sauce is bubbling.  Remove from oven and uncover.  Let the lasagna cool for 10 minutes before you slice and serve. Spinach Artichoke Lasagna | Life Healthfully Lived

You can make this lasagna ahead of time and then just pop it in the oven at dinner time.  I hope you have a Happy Halloween and a great weekend!

Hearty Vegetable Cassoulet

CassouletHearty Vegetable Stew | Life Healthfully Lived .  It just sounds fancy doesn’t it?  But then again, most French words sound fancy.  In fact, this dish is probably as far from fancy as you can get.  A cassoulet is a slow-cooked casserole that started out as a peasant meal.  Basically, all the scraps of meat, bones, and vegetables were placed into a clay baking dish and cooked over low heat for a long time to make a delicious cross between a casserole and a hearty stew.

Over the years, chefs and restaurants got a hold of it and “elevated” it to make it good enough to be put on expensive menus.  The truth was that not much needed to be changed to make a delicious dish because sometimes the simplest things are the tastiest.Hearty Vegetable Stew | Life Healthfully Lived

I made this cassoulet a little different than the traditional dish because I didn’t include any meat.  It is still a very rich dish that is great for the cooler nights we’ve been having.  You can also add meat if you wanted or mushrooms if you wanted to keep it vegetarian but add a “meaty” component.

This dish can be made ahead of time and then just popped in the oven when it’s time for dinner.  It tastes like you have spent all day cooking it, but we can just keep that our little secret!  So impress your friends and family with a tasty and fancy cassoulet that is as simple as could be.

  • 1 tsp olive oil
  • 6 cloves of garlic, minced
  • 1 1/2 cup onion, diced
  • 1/2 tsp dried thyme
  • 1/2 tsp marjoram
  • 1 tsp rosemary
  • 1/2 cup dry red wine (I used a malbec, but you can use whatever you have on hand)
  • 1 cup carrots, peeled and diced into rounds
  • 3/4 cup celery, sliced
  • 1 can diced tomatoes (I used fire-roasted)
  • 1 tbsp molasses (you could use maple syrup too)
  • 1 tbsp spicy brown mustard
  • 1 can garbanzo beans, drained and rinsed
  • 1 can white beans, drained and rinsed
  • salt and pepper to taste
  1. Preheat oven to 350 and heat olive oil in a large saucepan over medium heat.  Add in the onions, garlic, thyme, marjoram, and rosemary.  Saute for 2 to 3 minutes
  2. Add the 1/2 cup wine and bring to a slow simmer.  Cover the dish and simmer for 5 minutes.  Remove cover and stir in the vegetables and simmer for another 10 minutes.  Add in the rest of the ingredients and return to a simmer.
  3. Taste and adjust the salt and pepper to your taste.  Transfer the whole things to a 9 x 13 casserole dish and cover with aluminum foil.  Cook in the oven for 45 minutes.

See? It really is a simple meal.  After cooking in the oven for 45 minutes, you’re left with a meal that is stick to your ribs good and is loaded with good for you vegetables and legumes.  If you want to do this meal with meat, I would use chunks of beef because they will handle the long cook time well.  Just make sure to brown them before adding them into the dish.Hearty Vegetable Stew | Life Healthfully Lived

Oh, and Adam wants me to make sure to tell you to serve this with bread.  But then again he wants me to serve bread with every meal…

Hobo Skillet Casserole

Sunday is usually my big chore day.  It’s the day that I do all the laundry, clean the bathroom, super clean the kitchen, clean all the floors, and any other cleaning that is needed.  I also get my blog ready for the next day and finish up any other odds and ends that need to be taken care of.  Sometimes when dinner rolls around, I really don’t want to put a lot of effort into my meal.

This is where a well stocked freezer and pantry come in hand.  You can come up with a delicious and healthy meal in a matter of minutes with just a few staples.  I made this meal last Sunday and asked you guys if you would be interested in how to make it.  I got a fairly good response so here it is!  Keep in mind that you can totally customize this dinner with the ingredients you have on hand.

Hobo Skillet Casserole

  • 1 cup pasta (I used gluten free penne but you can use whatever you normally do)
  • 1 potato, cut into cubes
  • 1 cup butternut squash, cubed (can also use any other squash or sweet potatoes)
  • 1 cup frozen spinach, thawed (can use any green you have like chard, collard, or kale)
  • 1/2 cup assorted vegetables (I used a frozen mix of broccoli, cauliflower, and carrots)
  • 1 small onion, diced
  • 2-3 cloves garlic, minced
  • 1 8 oz can of tomato sauce
  • 1/2 cup almond milk or any other non-dairy milk
  • 1-2 tsp Italian seasoning
  • salt and pepper to taste
  • gluten free breadcrumbs (optional)

  1. Preheat oven to 350.  Cook pasta according to package, drain, and set aside.
  2. While pasta is cooking, mix tomato sauce, almond milk, Italian seasoning, and salt and pepper in a small bowl and set aside for later.
  3. Heat a cast iron skillet over medium high heat.  If you do not have a cast iron skillet you can use a regular skillet and transfer the casserole into a casserole dish.
  4. Add a little olive oil to the pan and then saute the onions and potatoes until the potatoes are lightly browned. Transfer the potatoes and onions to a bowl with the pasta.
  5. Add the vegetables and butternut squash to the skillet and cook until slightly brown.  Add in the garlic and cook for another minute.  Place the vegetables into the bowl with the potatoes and pasta.
  6. Pour the tomato sauce mix into the other bowl and stir everything to combine.  Add everything back into your skillet or casserole dish.  Place in the oven and bake for 15 minutes.
  7. Remove from oven and top with the bread crumbs if you’re using and bake for another 5 minutes.

This is a great meal to make at the end of the week to use up any food that you have leftover in the fridge.  You can use whatever you have on hand.  If you don’t want to use pasta you can try brown rice, quinoa, or any beans you have.  If want add ground beef or turkey, shredded chicken or pulled pork.  Choose your favorite vegetables or whatever is in season.  Use different seasonings to change up the flavor or try a different sauce like salsa or hummus or cashew cream.

Meals like this are awesome because they are easy to make and can taste different every time you make it depending on what you use.  Get creative and get eating!

Spring Casserole

It’s been a struggle, but I think spring is almost here.  Every time I say that we slip back into 30 degree temperatures with a chance of flurries in the forecast.  But I’m going to be optimistic and say the worst is passed and sunshine and warmth is right on the horizon.

One of the ways I’m able to stay so optimistic is that spring produce is starting to hit the shelves.  Things like asparagus, peas, leeks, and mushrooms are all emerging and signaling the end of a long winter.  When new fruits and vegetables come to the grocery store I always get excited to try new recipes and come up with some delicious meals.

I can’t take all the credit for this dish though. It was largely influenced by Keepin’ It Kind’s Pumpkin Seed Pesto Rice Casserole.  I really liked the idea of using a pesto as the sauce in a casserole.  I changed a few things up and loaded it with a lot of yummy spring vegetables. I brought it along with me to my families Easter brunch and they seemed to enjoy it.  It’s great to feed a crowd and really simple to put together, plus the leftovers are delicious!

Slightly adapted from Keepin’ It Kind’s Pumpkin Seed Pesto Rice Casserole

Pesto Sauce

  • 1/2 cup sunflower seeds
  • 1 cup spinach (I used frozen but if you use fresh add another cup)
  • 3 large cloves garlic
  • 1 tsp dried basil
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Spring Casserole

  • 1 cup chopped asparagus
  • 1 package mushrooms, sliced (any variety, I used baby bella)
  • 1 cup peas
  • 2 leeks, white parts only, sliced
  • 1/2 cup chopped onion
  • 1 15 oz. can cannellini beans, rinsed and drained
  • 1 cup cooked brown rice or quinoa
  • 2 tsp Italian seasoning
  • salt and pepper to taste
  • lemon juice to taste

Bread crumb topping

This topping is totally optional but adds a nice crunch. If you’re gluten-free use your favorite gluten free bread. 

  • 2-3 slices bread, dried out
  • 1 tbsp nutritional yeast
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/4 tsp salt

1. Start by making your bread crumbs.  Place everything in a food processor or blender and pulse a few times until you have a crumb consistency. Set aside.

2. Make your pesto next.  Combine all pesto ingredients in a food processor or blender until you reach desired consistency.

3. Next, heat a large pan over medium high heat.  Saute the onion and leeks until soft, about 5 minutes.  Then add in the mushrooms and cook until their size reduces by half.  Then add in the peas, asparagus, rice, beans, and seasonings and heat through for another 5 to 8 minutes.  Place this mixture into a large bowl.

4.  Preheat oven to 375. Scoop the pesto into the large bowl and combine everything really well.  You don’t want any large chunks of pesto hanging out in the mix. Then pour the mixture into a lightly oiled casserole dish and sprinkle the bread crumbs across the top.  Place in the oven and cook for 20 to 25 minutes or until the bread crumbs are golden brown.

And that’s it!  A simple spring casserole that is easy to make and tasty to eat!
